Is canola oil as good for you as olive oil? Should you eat more polyunsaturated fat or less? Is this a good time to switch from margarine back to butter?

Few subjects cause as much confusion as fats and oils. How do we know? We've started measuring our fat mail by the pound. So, at the request of our letter cartier, here's a little fat and oil guide.

While the cholesterol you eat raises your blood cholesterol level, the sat fat you eat probably raises it even more.

Where do trans fats fit into the picture? They're unsaturated fats that raise cholesterol, possibly as much as saturated fats. They're formed when manufacturers partially hydrogenate (add hydrogen to) liquid oils.

Partially hydrogenated oils are less likely to become rancid, can be re used more times for deep fat frying, and make baked goods tender and flaky. They're found mostly in margarines, fried fast foods, and cookies, frostings, pies, pastries, and doughnuts. If a food is fatty and is made with "partially hydrogenated" oil, it's probably high in trans.

Does the trans fat in margarine mean that I'm better off eating butter? No. Butter's got far more saturated fat. This line represents a section and thus, every section has a zero. This is how we know that this line bundle is not trivial. So every section vanishes.

"If anybody was going to shoot us they were going to shoot in that dormant moment when it was silent." The bullets never came, of course, but the hatred did. "They went into a rage," as Carlos puts it.

    It was October 16, 1968, and as the battle for civil rights raged on American soil, these two sprinters had dragged the fight on to the most global of stages.

    Carlos and Smith's protest at the Olympic Games in Mexico City after they finished third and first respectively in the 200metres final was not just one of the defining images of Olympic history, it was one of the most iconic moments of the 20th century.

    Carlos was just 23 when he made his stand, and it cost him everything. With his reputation ruined, he struggled to find a job, his children were bullied at school and then, nine tortuous years later, his wife Kim took her own life. By then, their marriage had broken down, and Carlos believes her death was partly the result of the endless interference of the Federal Bureau of Investigation, which had placed him under constant surveillance since his return to the United States.
