The career mode called Face of the returns in Madden NFL 21, this time named Face of the Franchise -- Rise to Fame, and is revamped from the game. Players begin as a high school quarterback. After that, players spend 2 seasons playing with college soccer. During college soccer seasons, their rankings can change in running back or quarterback to Madden 21 coins wide receiver. After the school seasons, players have been drafted at the NFL Combine, in which storylines play out across a number of seasons, with players trying to turn it into the Hall of Fame. The Franchise's Surface features Rich Eisen and Snoop Dogg both played by themselves.

Changes are seen by the Franchise Mode. An expanded Wild Card Playoff round is included, featuring three matches for each conference instead of two. X-Factors are also included, with all the game also featuring 50 new X-Factors on top of the ones from the previous entry. The game also features a new style called The Yard, that focuses on NFL Street-style soccer. New user controller celebrations are also included in the game.

Madden NFL 21's roster of gamers sees five players in total. The cover celebrity, Baltimore Ravens quarterback Lamar Jackson, includes a 94 OVR score.
